Preheat oven to 350°F, and prepare baking tin with cupcake liners 2. In a saucepan, infuse milk and earl grey tea over high heat. 3. Remove from heat the moment a boil forms, and let tea steep for about 20 minutes. Then, strain loose tea leaves/bags. Set aside to let cool. [Earl grey infused milk] 4. In a medium separate bowl, combine flour, baking powder, and pinch of salt. Set aside. [Dry ingredients] 5. Using a stand mixer with paddle attachment (or a hand mixer with a large bowl) on medium speed, combine butter and sugar until fluffy, about 3-5 minutes. Since the yield of the recipe is small, some butter can be caught at the bottom of the mixing bowl before it’s incorporated with the sugar. Ensure to scrape. 6. Then, individually add each egg on medium speed, ensuring to scrape the bowl after mixing. Decrease the speed to low, and incorporate half of our dry ingredients until just combined. Emphasis on “just combined” as over mixing will cause the cupcakes to not rise properly 7. Add in our Earl grey infused milk, mix until just combined. Then, add in the remainder of dry ingredients until combined. 8. Fill the cupcake liners to about ¾ full, and bake for about 15-20 minutes. Test if a cupcake is ready by pricking with a toothpick, checking if it comes out cleanly. Otherwise, bake for an additional 1-2 minutes. 9. Remove cupcakes from the pan, and set aside to cool. We want the cupcakes to cool completely, otherwise the frosting will melt and slide right off of the cupcake. 10. Frost on the lemon buttercream, add a maraschino cherry and voila! For the Lemon Buttercream Frosting Ingredients 1 cup butter, softened 4 ½ cups powdered sugar, sifted 1 lemon juice 1 lemon zest Good dye Maraschino cherries Directions 1. Whip butter with a mixer on medium speed until whipped and fluffy, about 5 minutes. 2. Incorporate powdered sugar, zest, and food coloring, and mix on low. Slowly incorporate lemon juice as it mixes. Mix until combined. **Tip: make sure to scrape butter off the bottom of the bowl to incorporate. 3. Then mix on medium for approximately 3-4 minutes until buttercream consistency is achieved **Tip: if the buttercream splits, try adding in more powdered sugar. You want stiff peaks. Depending on the size of your lemon, adjusting may be required.
